Herring steak tartare with potato pancakes, mustard soup, or roasted goose with potato dumplings. All these are typical Kashubian dishes. Served in the elegant interior of Filharmonia restaurant, they transform into culinary pieces of art. The restaurant, located on Ołowianka island, is one of the obligatory locations to visit  while in Gdańsk.

-We are still in the same location, the direct neighbourhood of Polish Baltic Philharmonic, but we can say about a new opening – say the owners of Filharmonia restaurant. – The recently opened footbridge us that joins the pier with Ołowianka island is located nearby. Right next to it, there is the characteristic GDAŃSK sign, which has already become a major tourist attraction. This brings us closer to the Main Town – they add.

Filharmonia invites its guests by promoting their classic menu. However, it is constantly enhanced by currently available, seasonal ingredients. All to allow guests to enjoy the most fresh, top-quality products.

Marcin Szlagowski, head chef in Filharmonia, puts accent on pronounced Kashubian motives. He knows what he is doing – he is a true-born Kashubian. Among his inspirations is his Kashubian home, from where he took the recipe for potato dumplings.

The first dish worth mentioning is the Kashubian mustard soup. It is an absolute original, unavailable anywhere else in the region. It is prepared using the one and only Kashubian mustard.

Explorers of new flavours will certainly enjoy roasted duck with potato dumplings. It is one of the most popular dishes, and one that is always praised by guests. For dessert, try the excellent plum carpaccio, an original recipe by the head chef.

The menu also includes a 0.75 kg beef steak, marinated according to head chef’s recipe. The secret to this dish is long roasting time.

Local cuisine, regional products. – I try serving unobvious products to my guests. This is the reason for including freshwater perch in the menu, a fish that is not that popular in restaurant menus. Freshwater perch is a fish that is underestimated by Poles. Its meat is far more subtle than, let’s say, zander. Perch has unquestionable taste attributes and is easily consumed – says Marcin Szlagowski.

Fish served in Filharmonia restaurant are from local suppliers. Cod, for example, is supplied by Artur, a fisherman from Gdynia Orłowo.

Filharmonia restaurant is not only about food and a breath-taking view on the historical heart of Gdańsk. During live cooking meetings, organised in the restaurant, guests can observe the head chef at work, and later taste the dishes that are served directly from the stove.
