Regional Kashubian cuisine is enchanting in its simplicity and traditional, pronounced flavours, ones that are sought after so often nowadays. Is there, then, a better place to indulge yourself in best Kashubian dishes, than the place in the region’s heart, whose walls evoke its great history? The restaurant of Kościerzyna Old Brewery not only pleases with its rich menu offer, but also delights with its genuine, welcoming atmosphere. The 150-year-old, unique venue is a great place for lunch or dinner.
The building that houses the restaurant, brewery, pub, pizzeria, and the Old Brewery Kościerzyna Hotel was built in 1856. Enormous amounts of work put into restoring this place by its owners enables guests, who visit this place gladly and in substantial numbers, to fully enjoy and experience its beauty. Original, XIX-century photographs that evoke the greatness of this place, allows for a journey into Kashubia long forgotten, known today only from our great-grandparents’ tales.
Sławomir Miotk, head chef at Old Brewery Kościerzyna restaurant, has one goal: serving known flavours of regional cuisine in a contemporary “rendition”. He is also famous for his affection to modern culinary techniques, and using what Kościerzyna Old Brewery boasts: beer that is brewed here is not an uncommon ingredient of his meals. Restaurant’s specialties are beer soup, and beer-basted eisbein with cabbage. Another interesting item on the menu is fresh fish straight from the morning catch, prepared by the head chef.
- In Kashubian cuisine, I combine culinary tradition with new trends in nutrition. When it comes to cooking, my guru is Alain Ducasse. I particularly enjoy French culinary techniques. For instance, through confiting I am able to give unique flavours and aromas to our traditional Kashubian dishes. Our cuisine is unconventional, this is why there is something for those who prefer traditional cooking, as well as those who seek for new, still undiscovered flavours - says Sławomir Miotk.
The restaurant, as one of four in Poland, is equipped with a special Josper’s stove, imported from Spain. Meat and fish that are prepare in it gain an excellent quality - they are tender on the outside, and juicy on the inside.
- Our menu comprises typical Kashubian and Polish specialties, such as aromatic homemade bread, full meats, or different varieties of pierogi (dumplings), but also light poultry or fish dishes. Through minor alterations of recipes, the dishes become lighter, at the same time pertaining all their flavours. This is why I can serve our guests a healthier and lighter variety of local cuisine - adds Sławomir Miotk.
The menu is a rich showcase of soups, meat, and fish meals. Enjoy roast venison loin, with dried mushrooms power, raspberry sauce, parsley and chanterelle puree.
Or try roast veal with blood amaranth, caramelised melon, and goat cheese croquet.
Among chef’s specialties, there is also halibut with sun-dried tomatoes pesto, cabbage rolls stuffed with pearled barley, served with sun-dried tomatoes sauce, pine nuts, and red cabbage puree.
Of course, all the delicious meals served in Old Brewery Kościerzyna are best enjoyed with local beer. A visit to the restaurant also provides an opportunity to take a peek at brewers at work.
Currently, there are three kinds of beers available in Old Brewery Kościerzyna: Wheat Beer, Dark Beer, and a Kellerbier. Each season of the year has its seasonal beers, as well. Those are highest quality beverages - with no preservatives, brewed using water from a local spring. Meticulously selected hops and barley, as well as natural herbs and spices come from Polish and international farms. You can also participate in the “Secrets of Kościerzyna Brewery”, during which you will not only have the possibility to take a guided tour of the brewery, but also taste local beers and beer snacks (including beer cream rolls, and pancakes (“ruchanki”) with beer caramel).
