Traditional on the one hand, on the other – in tune with the latest trends. Stary Browar Kościerzyna (Kościerzyna Old Brewery) is a place of unique atmosphere, delicious treats and, of course, beer of which hundreds of litres flow each day. When visiting Kościerzyna, trying the classic, amber liquor produced by brewing masters is a must.

There are six kinds of beer currently produced in the Brewery: Wheat, Dark 10, Red Lager, IPA, AIPA, and the most popular – Lager. The seasonal offer also includes flavours dedicated to particular seasons of the year.

Stary Browar Kościerzyna (Kościerzyna Old Brewery) uses its own water supply to brew beer traditionally, using the so-called full hops, i.e. entire compressed hop cones. Malts and hops come from Polish and international plantations.

-Beer is essentially a drink made from malt, wheat or barley, and hops is just a seasoning, like salt and pepper are. And so, for example, bitter hops are added at the beginning of the brewing process, and aromatic hops – towards the end. The flavour of beer depends on four factors: type of malt (dark, light, smoked, etc.), type of hops, yeast strain, and type of fermentation (top or bottom), i.e. the temperature of the process – explains Bolesław Gut, general manager of the hotel in Kościerzyna Old Brewery complex.

The quality of the amber liquor is assured by the general manager of the brewery and the head brewer, Jarosław Kołodziejski. A visit to the restaurant and pub is an opportunity to observe the masters at work.

– Our beer is unpasteurised and unfiltered. Carbonation occurs naturally and is a result of the fermentation from brewing yeast, which we carefully select and multiply – explains Jarosław Kołodziejski, who has been in the industry for more than 15 years.

The brewery is fitted with professional brewing equipment brought from Upper Franconia. Giant vats are undoubtedly a neat decoration.

Whilst sipping Kashubian beer, one should try delicious treats prepared by and under the watchful eye of the head chef, a maestro of flavour, Sławomir Miotk. The cuisine in Stary Browar Kościerzyna (Kościerzyna Old Brewery) is a combination of traditional and modern cooking, with a pinch of the chef’s imagination. The head chef loves to experiment, blend flavours, and he enjoys adding local beer to his creations. The beer is an element of many of his recipes. The restaurant’s specialties are beer soup and beer-roasted eisbein.

Stary Browar Kościerzyna (Kościerzyna Old Brewery) has become one of the city’s landmarks. The revitalisation of the property – the brewery with the originally preserved malt house – took several years. It is a place with over 150 years of tradition, a reminder of which is the preserved chimney of the old malt house, under which brand new foundations were laid.
